Cosmic Cookie Recipe

These were a big hit at the office this morning….healthy and simple to make. Enjoy!

2 1/4 cups quick oats
2 cups spelt flour
1 cup sunflower seed
3/4 cup pumpkin seeds
1/2 cup shredded coconut, unsweetened
1/4 cup flax seed
1 cup granulated unbleached cane sugar
1 tablespoon cinnamon
2 1/4 teaspoons sea salt
1 3/4 cups dark chocolate chips or carob chips
1 1/4 cups raisins
1/4 cup water
1/4 cup blackstrap molasses
3/4 cup canola oil
1 cup soymilk

Directions:

Preheat oven to 350°F.

Line two baking trays with parchment paper.

Combine dry ingredients : from oats to raisins.

Combine wet ingredients: from water to soy milk.

Stir dry and wet together until just combined.

Portion cookie dough using 1/3 C measure and place on baking tray.

Gently flatten cookies.

Bake for 24 minutes or until lightly browned.

The Giver 2009

The Giver 2009:

On November 21, 2009, 300 people attended the 2nd annual “The Giver”, a party hosted by St. Michael’s Young Leaders at Rosehill Lounge in Toronto. Music by DJ Hussey kept the crowd dancing until 3am. All proceeds will go to fund the Young Leaders’ current project, a facelift of St. Michael’s Hospital Emergency Room. Thanks to the success of this event and the Young Leaders “DodgER” dodgeball event at SteamWhistle in September, construction will begin in early 2010.

Another Halloween has come and gone just like the fall season. The best thing about Halloween is assuming a secret alias…taking risks because you’re disguised. I love how the streets of Toronto become dominated by crazy pedestrians in costume…really there’s no need to pay cover to get into a bar because the party is everywhere. Random strangers are friendlier on Hallo’s Eve; perhaps because they are sharing this common celebration. Normally, we just go about our business with our circle of friends but on Halloween we feel compelled to yell out profanities, introduce ourselves, comment on one another’s costumes, invite each other to “after parties” etc.

The only thing lacking is “after-hour places.” Toronto needs to be more like NYC…restaurants and bars could have made a fortune between 2 and 5 am…but perhaps this shortcoming is the only way for party-goers to realize that the night just can’t go on forever. Halloween and altered disguises has to end and unfortunately, the next morning is just another day in the life….until next year!

The DodgER 2009:

On September 10th, 18 teams battled it out at Steam Whistle Brewery in front of 200 cheering spectators for the glory of being crowned dodgeball champions. The inaugural DodgER, brought to you by St. Michael’s Hospital Young Leaders (SMYL), was a night of music, drinks, dancing, and of course dodgeball all for a good cause. Get your teams together and start practicing now for the 2nd Annual DodgER in September 2010.

Life is full of surprises….last night (June 27), our student film, “Hello, Darling” won 3 awards at the 3rd annual Speak Up! Film Festival; “Best Soundtrack”, “People’s Choice Award” and “Film of the Year!!!” We basically swept the house winning 3 of 7 awards.

On Thursday, June 11th, I graduated from Ryerson University’s Radio and Television Program. The pomp ceremony and tradition were surprisingly moving as the blue gownded graduates were piped into the theate.

Four years of hard work and great times with good friends evoked feelings of joy, sadness and reflection. The reality hit….it’s over. Cheers to “the next step” as they say in American Pie.

P.S. There’s something we all earned honours in and that’s celebrating.

As I like to consider myself a young, urban cultrate, I have been intensely interested in exploring the many avenues of culture through their association with video production.
